Do I need to show a round-trip ticket with my return date aligned with a tourist visa duration when applying at the Thai embassy?

I'll be applying for a tourist visa to Thailand next week at the embassy in Hanoi. According to the website, I'll have to show proof of a round-trip ticket but I can only get an initial 2 months extendable to 3 months while in Thailand. So my question is, if I need to show proof of having purchased a two-way ticket, can the return ticket be dated three months after the arrival ticket, or are they even requiring this when applying for a visa? I don't remember it being a requirement the last time applied for one.

It looks like I can change the departure date without a fee for VietJet Airlines. I haven't looked into other airlines.

So what is the point of the visa being extendable for another 30 days while in Thailand? Is the applicant expected to not use the return ticket if it is extended?
