I'll be applying for a tourist visa to Thailand next week at the embassy in Hanoi. According to the website, I'll have to show proof of a round-trip ticket but I can only get an initial 2 months extendable to 3 months while in Thailand. So my question is, if I need to show proof of having purchased a two-way ticket, can the return ticket be dated three months after the arrival ticket, or are they even requiring this when applying for a visa? I don't remember it being a requirement the last time applied for one.

TLDR : Answer Summary
When applying for a tourist visa to Thailand, a round-trip ticket is typically required, demonstrating proof of exiting the country within the visa's validity. Generally, for a tourist visa granting a stay of up to 60 days, you must provide evidence of a ticket out of Thailand that matches the visa duration. It is advisable to check the latest requirements as they may vary and can differ from previous experiences.
Most visa applications require proof of leaving Thailand within the number of days you'll receive from the visa itself. For a tourist visa that means proof of a ticket out of Thailand within 60 days. There are various ways to prove this without intending on actually leaving at that time.
So what is the point of the visa being extendable for another 30 days while in Thailand? Is the applicant expected to not use the return ticket if it is extended?
