I am looking to get a tourist visa before and later get a ed visa but I was wondering do I need proof of a return ticket to my home country to get a Thai tourist visa?

TLDR : Answer Summary
When applying for a tourist visa to Thailand, proof of onward travel within 60 days is typically required, but it doesn't necessarily have to be a return ticket to your home country; any ticket leaving Thailand will suffice. Some embassies or consulates may also ask for additional documentation like proof of funds (20,000 baht) and a hotel booking. It varies by consulate, with some locations, such as the Thai consulate in Vientiane, being more lenient about these requirements.
Where are you going to apply for the single entry tourist visa? In your country before you wing your way here OR from a thai consulate in a neighboring country?
That makes a LOT of difference on what documentation you will have to provide.
Right now the ONLY thai consulate in S/E Asia that doesn't require ANY of the 3-proof-ofz is the one in Vientiane.
You just need the application, 2 passport sized photos, copies of your passport and 1000baht

Im already in Thailand so you think I will be alright if I go to Vientiane without proof of onward travel

not your home country, simply a ticket out of Thailand.

And some Consulate, for example Penang, also ask hotel booking (minimum 14 days) or house rental contract

You need proof of travel leaving Thailand within the 60 day period of the Visa, not necessarily back home country. Some Embassy./Consulate will check.

In theory you do, but the embassy didn't even ask

Yeah also at the border you can also be expected to be asked those 3 proofs (particularly if your travel patterns look like you are spending a lot of time in Thailand)

He should play it safe.

I got my first SETV this year in HKG and another one in Penang. Didn't get asked at any of the 3

You should qualify that with "the thai consulate you went to didn't ask".
More and more thai consulates in S/E Asia are asking for those 3-proof-ofz to issue single entry tourist visas
