I'd personally do the exemption and extend while here. You just show up and pick a day to go to the immigration office, pay 1900 thb and you're done. I feel like the applying for the visa option would be more hassle. Having to send bank statements, accommodation info etc etc.. Whatever suits you better though.

Tourist Visa is 60 days and not difficult to get. Visiting is only 30 days. You need a visa.

Get the visa because then you have proof of your onward travel within 60 days, you won't have that have that if you get a 30 day entry stamp

If you are from one of the visa exempt countries (but depend on the country because few countries just get 15 days stamp on arrival) not necessarily. You get 30 days on arrival and for 1900 baht extending for another 30 days... Or come straight on a TR visa which gives you 60 days. The TR visa 1400 baht. So if the extra 500 baht matter TR visa is your choice if not just extend in the country. It's a maximum of a few hours in the immigration office.
Just come on your passport for 30 days go up to immigration and they will extend it for you for 1960baht. Or you could do the Cambodian run and come back in for another 30 days

Maybe you should consider a non IMM type of visa. Type B then You get 90 days. Needs a letter from your spouse. And needs to be applied at your Thai embassy
Didn't know there was an English passport 😉 Anyhow: 2 choices: Get a visa upfront for a hassle-free stay. Or b) come without / get a 30 day visa exemption upon being stamped in and then extend in Thailand within the initial 30 days for another 30 (or 60) days. Given eVisa, I would do the former. Cheaper and less inconvenient.
