TLDR : Answer Summary
When applying for a Non-O visa or upon entry into Thailand with this visa type, a return ticket is generally not required. Several commenters confirm that they were not asked for a return flight when entering Thailand on a long-term visa like the Non-O. It's advisable to confirm current requirements directly with relevant authorities or the airline, but indications suggest that having a return ticket isn't necessary.

I was in the same boat as you are in now about 6 weeks ago but from the US and wasn’t quite sure what to do.

I purchased two one ways the second being refundable.

I was never asked to show a return ticket by anyone not the airlines nor immigration.

Brandon is correct. You do not need a return or onward flight when entering on a long term visa, like a Non O.

You should not need a return flight while applying for or when you enter with a non-O visa
