What online app are you talking about? The one that Jomtien is testing? That's the only immigration office I know that has an appointment application and it's not the only immigration office in the country
You can go between 30 days till the last day of Admitted until stamped in your passport. The Extension of Stay is added to your current stay, so you will not loose days by going early.
