Hi all, if I get a guardian visa for my kid's ED visa, am I allowed to work in Thailand? Or if I stay more than 180 days will I have to pay tax on my offshore income?

Also, what's the minimum age allowed for an ED visa?

EDIT: The youngest age I can find for schools is 18mths. Can they get an ED visa at that age?

TLDR : Answer Summary
If you obtain a guardian visa for your child’s education (ED) visa in Thailand, you will not be allowed to work. To work legally, you would need a non-B visa supported by employment. Regarding taxes, while you technically become a tax resident after staying in Thailand for 180 days, there is little enforcement on taxes for offshore income. As for the minimum age for an ED visa, it appears that the youngest age for eligibility is generally 3 years old.

I think there's a minimum age of 3 for an ED visa

You will not be able to work on a guardian visa. You would have to get your non-B visa with the support of your job in order to work.

I don't know anyone that pays taxes on their offshore income. Thailand has no way of knowning. Technically you become a tax resident after 180 days but it's not enforced in any way.
