TLDR : Answer Summary
The post discusses the possibility of using Emirates' multi-risk travel insurance, which includes COVID-19 coverage, for the visa application or certificate of entry process for Thailand. I'm currently in ALQ and used this policy to get my COE approved by RTC/DXB for EK384 DXB-BKK on 15-Jun. No issues at all, accepted at EK check-in in DXB and Thai Immigration in BKK.
