TLDR : Answer Summary
The Visa on Arrival (VOA) for Indian passport holders allows a stay of 30 days, but it is not extendable if you arrive before March 31, 2023.

If you arrive before March 31st 2023 you’ll get 30 days on a VOA. This is not extendable.

Ok. Or is it possible that we go for a day out of Thailand and then get back and our 14days cycle starts again ? Just like how we do in Indonesia

will have to wait closer to the time to see if they decide to extend the dates for a 30 day VOA or if it will revert back to 15

as of today it will revert back to 15 days VOA.
