I arrived yesterday in Thailand and got the 30 days stamp (German Citizen)
Can I go now already to the immigration office to extend by 30 days more (to have 60 days in total) or do I have to do that just before I have to leave the country.
If I do it now, do I get the full 60 days in total or will it be the days I have used from my 30 days entry stamp +30 days?

It depend on the immigration. I did read that some immigrations accept only request within the last week. Its always best practise to check the local requirements first. With 70+ immigrations there are many differences.
You can apply for a 30 days tourism extension anytime now at your local immigration office except at Jomtien, Hua Hin, and some other offices. Some offices accept tourism extension applications within the last 1-2 weeks.
A tourism extension of 30 days will be added (=top-up) to your current stamp. There would be no downside to applying for your tourism extension in advance, you wouldn't 'lose' any day by applying earlier.
