TLDR : Answer Summary
Yes, it is possible to extend a 60-day tourist visa in Thailand by an additional month, and you can also change from a tourist visa to an education visa without having to leave the country. However, you need to ensure that you have at least 15 days left on your current tourist visa to be eligible for the switch to an education visa.

Just be aware that to switch to ED visa you need at least 15 days left on your current stay, sometimes more.

If you find somewhere doing Ed visas let me know I’ve messaged 3 different agencies in 3 different areas of Thailand recently and been told due to a change in staff at immigration they can’t offer Ed or volunteer visas at the moment!
There's a place in Chiang mai that will do them right now, think it's about 60k for a year though. If you can wait a couple months, everything will be back to normal.
contact schools directly, don't use agents. Duke, ALA are 2 schools I recommend. You can't get away with the old school Ed visa any longer, you'll actually need to attend 4-5 days a week.
