So would it be possible to travel on a 30 day n then 30 extension and apply once I arrive in Thailand. I’m considering Hua Hin
as long as you get started as soon as you arrive you should have enough time

Further to what Brandon said: Some schools will tell you that you would have to leave the country to get an ED visa from a consulate abroad. Others will try to charge you north of 10k baht baht merely for changing the visa in-country. Be cautious about both kind of schools.

There is no 1 year ED visa. There is a 90 day ED visa that can be extended.
You can convert from a tourist visa to an ED visa if you have documentation from your school and enough days left.
