Can I enter Thailand visa-exempt for 30 days and then extend my stay if I have a German passport?
Travelling from Turkey to Thailand (german passport, double-vaccinated) probably in december. I won't get eVisa I think, but can I just go there with visa-exempt 30 days and extend there for another 30 days? I don't want to take care about visa things because I think I'd had to go to Thai embassy in Ankara and I want to avoid that effort.
Answer summary
A traveler from Turkey with a German passport can enter Thailand with a visa-exempt stay for 30 days and can extend it for an additional 30 days once in Thailand. However, it's important to note that Turkey is not listed under the test and go countries, which means the traveler may need to quarantine or enter via the sandbox system. It is also advisable to ensure that any exit ticket is dated beyond the 30-day visa-exempt arrival to avoid complications.

If your ticket out of Thailand is dated past the 30 days - then I think you might run into trouble and need the tourist visa (60 days).

Yes you can come in visa exempt for 30 days and extend for 30.
You are aware that Turkey is not on the list for test & go countries and you would have to quarantine or enter in with the sandbox system.
