Has anyone tried to apply for a spouse dtv visa, by showing an official and notarized document from your home country, stating that you are spouses without marriage? Our home country acknowledges such relationship and considers it equal to marriage.

For Thailand you always need a certificate of marriage for anything to do with a spouse. No jumping over a broom stick in a Buddhist country. I think you are talking about a common law wife/husband. No!
