TLDR : Answer Summary
Citizens of Argentina, Brazil, Chile, South Korea, and Peru can typically stay in Thailand for up to 90 days under the visa waiver program. Hubert Both asks if leaving Thailand after 80 days and returning two weeks later would grant him another 90 days. Responses confirm that re-entry usually allows for another 90-day stamp; however, some land borders may have had issues with this before COVID-19, and updates on these protocols post-pandemic are unclear.

Be warned, There were some land borders that didn’t stamp in for 90 days visa-waiver before Covid.

No update about those after covid so far.

which is good to know but doesn't negate the fact that SOME border crossing won't let people who come from countries that get 90 day waiver entries bounce out and back

yep it's 90 day entry by air or land for people from those 5 countries, there is no other amount of time you can be stamped in for.
