TLDR : Answer Summary
In Chiang Mai, only a tourist visa or Visa Exempt Entry can be extended by 30 days. Non-Immigrant O visas do not qualify for this extension. It's important to consider the specific basis for your Non-Immigrant O visa when exploring extension options.

Last time we heared that the Ministry of Labor in Chang Mai is given out the work permits again, but you need the documents of your organisation.

Volunteer . . . . .I was going to extend it for a year but of course now we need a work permit to extend and I can't get a work permit . . . . . .so I need to go get another one now I think, while they figure all this out.

Only a tourist Visa or the Visa Exempt Entry can be extended once with 30 days.
