Can I stay in Thailand after my ED visa expires by using the tourist limit?

I am studying abroad in Thailand on a non immigrant ED visa. It is single entry, and expires March 23rd. I move out of Thailand on April 9th. I plan on traveling to Vietnam March 8th and then to the Philippines on March 15th.

Since my visa expires less than 3 weeks before I move out of Thailand, can I just NOT apply for a visa extension and stay for the up to 30 day limit that tourists get? And for my trips to Vietnam and Philippines just pay the single entry visa app fee at an immigration office?
