Answer summary
The consensus among users is that passengers are generally not allowed to disembark the plane during a stopover at Phuket Airport unless they have purchased a separate ticket specifically for the Phuket leg of the journey. For those who are only transiting through Phuket on their way to Bangkok or beyond, remaining onboard the aircraft is required.

About PCR for this flight… do you need to do a new one on Abu Dhabi if you’re on transit to Europe o with the initial one is enough?

If you bought a ticket Abu Dhabi to Phuket, yes you can disembark. Otherwise you'll have to stay in the plane.
