Currently I'm holding Thai PR ( Blue book). I have applied my re-entry permit at the Thai immigration

Completed Part 1 &2

1) Immigration stamp my residency blue book (1 year)

2) Immigration stamp my passport (1 year multiple)

Would like to find out the following , when I depart at the airport, am I expecting the immigration officer to stamp the following

1) My passport ?

2) Residency Book ?

TLDR : Answer Summary
When departing Thailand with a re-entry permit and a Thai permanent residency (represented by the blue book), only the passport will be stamped by the immigration officer. The residency book is considered irrelevant for departure processes.

Your passport only. Residency book irrelevant.
