TLDR : Answer Summary
The person is asking if there will be an issue with overstaying their visa given their arrival on May 1st and departure on May 31st. Comments indicate they will receive a 30-day visa exempt entry stamp, but it effectively counts as 29 days due to the arrival day counting as day one. There's a mention of potential overstay fees, with suggestions that a one-day overstay could lead to a 500 baht charge.

some say they will only charge me 1 day overstay and will cost me 500 bath. is that correct?

Yes the fine for overstay is 500 baht a day.

If you are flying out of either Bangkok Airport there is a good chance they will waive an overstay fine of just one day.

You will get stamped in a 30 day visa exempt entry stamp BUT in reality that stamp is only 29 days (because the day you arrive will count as day 1) :/

I take it you will not have bought a visa from a thai consulate before you come here?
