some say they will only charge me 1 day overstay and will cost me 500 bath. is that correct?

Yes the fine for overstay is 500 baht a day.

If you are flying out of either Bangkok Airport there is a good chance they will waive an overstay fine of just one day.

You will get stamped in a 30 day visa exempt entry stamp BUT in reality that stamp is only 29 days (because the day you arrive will count as day 1) :/
