Will applying for my Non B visa after my stated start date be an issue?

Non B visa question

Im going to apply for Non B in my home country, i had to come back to make a new passport because of expiry reasons and that delayed my application.

My documents, the contract specifically, states that i would start on nov 14th, but i will be able to apply around dec 5-6

Will this be a problem?

Could be a problem seeing as it says you're starting BEFORE you even applied for the Non-B.

Why not get NEW documents from the company just to be safe OR email the consulate you're applying for the Non-B in (you said you're doing it in your country) and see what they say about it.

Your passport nation is Mexico?

Can you get a letter stating your employment contract is changed to a December starting date?

You have been living in Thailand for how many months using various visas...Ed visa, Tourist visas, Non B visas, and extensions...

...in 2019?
