Which nearby Thai embassy/consulate is easiest to get a tourist visa within a week? Does anyone have experience with the one in Ho Chi Minh?

OR god forbid ur in siem reap, Kampot where it would cost ya over $10-40 each way to get to the capital, pay for hotels/food for 3-4 days and than back home

Depends on the country. If you lived in Cambodia, you'd use an agent for your visa extension. Everyone does. In Laos, this is also largely true (except for tourist visa extensions, which are generally done in person at the immigration office).

Savannakhet Laos accepts walkins without an appointment and you'll get your visa in much less than a week. Check the embassy or consulate website that you are interested in going to for their requirements and if they require an appointment.
