I've just gotten a non immigrant visa for 3 months and I'm soon going to apply for the extension to 1 year, my actual visa expiration is May 2018, will my extended visa expire in February 2019 or May 2019?

the date on the visa where it states "enter before" is the expiration date and all that means is you have until that date to enter thailand and get stamped in for 90 days.
When you apply for your year extension they will add the year to your current admitted until expiration date.
Claudio Molone If you only got 1 month Admitted to Stay the Immigration Officer properly did not see the Visa. You can visit Immigration Office to get this corrected, it must be 90 days from entry where entry date is day number 1.
The visa is just an entry ticket. At Immigration on enter they gave you an Admitted to Stay period, in your case till 17 March 2018. If you like to stay longer you go to local Immigration with all the required documents and apply for an Extension of Stay for 1 year. This year will be added to your Admitted to stay period. So if approved it will be 17 March 2019.
