20 000 requirement is money to show when you travel without a visa on visa exception. You have a visa so do not worry about it (or keep it just in case if they ask if you have money).

I was never asked that and also never asked to show 20k

I'm on a soft power DTV and I was asked about my employment/ business at the time of re-entry. I told them that I'm a freelance business owner and I'm working on my software project to launch an app on the Google Play store. With no further questions asked, I was simply stamped and allowed entry. Sometimes they may just ask about your ongoing work or employment to check what you are doing in Thailand. But it doesn't mean they want proof of income or any paperwork. Note that my project was ongoing and it wasn't launched yet. So, you can tell them about your future projects, plans, contracts, etc. and that you're a freelancer, but they generally don't ask about proof. Additionally, as you will be carrying 20K baht there should not be any issues..

Tell them you are unemployed and if Immigration is hiring 🤭. Joking aside, they might asked what you do but almost never who you work for so just tell them what you do.

They will ask for pay slips for that job. Worse case is they will ask you to buy an exit flight. The visa won’t be cancelled.

I doubt you would be asked. But if you are, then yes, show your old employment letter, or make some kind of new one

They want to see the 20K baht. If they had to follow the progress of every overseas contract that the original paperwork came with, they would never get to the next person in line. Don't sweat it.

You'll be OK. Documentation needed on extensions and if they take a disliking for you on entry.

That's why they ask for the proof of the savings over salary (where no minimum income is needed) on the visa.
