TLDR : Answer Summary
If you're purchasing COVID insurance for your return to the UK after spending time in Thailand, you should list all countries you have traveled to within the last 30 days. In your case, since you are only traveling back and forth between Thailand and the UK, simply indicate Thailand and the UK. It’s advisable to consult with the insurance provider directly if you have any specific questions regarding your situation.
I bought mine while I was in Mexico. I claimed that I had been in the US. I only transited US for 36 hours. Nobody really looks. I think the larger concern is if you need to make a claim. I would look to see if there is a price difference to make an informed decision.
