What options do I have to stay in Thailand while waiting for my ED visa application to be processed?

ok, i used my extension for visa on arrival, were applying for an ed visa, its going to take 4 weeks, i dont have 4 weeks left, so what can i do and go to be able to come back into thailand, and have enough time to get the ed visa, i know i will have to leave again when i have all the paper work for ed visa in hand.

You have the answer, but I still like to put it into right terminoligy. I used the Extension of Stay, 30 days on your Visa Exempt Entry of 30 days. If it really was an Extension on a Visa on Arrival, 15 days, it would be a 7 days Extension There is a big difference between Visa Exempt Entry and Visa on Arrival.

They told me 3-4 weeks to get my ED visa paperwork, I got it after 10 days.

If you don't already have 2 land visa exempt entries probably the easiest is a "border bounce" where you just go to the nearest land border, leave and get stamped back in for another 30 days visa exempt. Just note you can only do this twice by land per year.

Valentine Tea is a good option for lunch near the border. There is more food in Mae Sai in for sure, and in general I am not a huge fan of Burmese food (I have visited Myanmar for more extended periods), it's just if you have never tried it before, stuff like tea leaf salad, makes a nice change to try once. You'd want to leave a bit longer between your buses if you wanted lunch I think.

Ian all good advice except maybe lunch! I only had a short time I could stay in Tachilek and did not see anywhere I wanted to have lunch so I zipped it back to Mae Sai where there were many options.

Yes, Mae Sai. Green Bus VIP 319B each way, very comfortable. $10 for Myanmar immigration day pass. You can do it out and back same day, leave at least two hours to do it between your buses. Interesting to go have a look at Tachileik if you have never been there before, maybe have lunch there.
