TLDR : Answer Summary
For a dual US/UK citizen wishing to stay in Thailand for around 90 days and travel to Malaysia and Myanmar, the best option is a Multiple Entry Tourist Visa. This visa allows for multiple entries into Thailand, providing 60 days of stay for each entry, making it suitable for hopping between countries.

It is answered in my first comment, the visa stays valid till the enter before/valid until date on the visa. BTW you only get an Admitted to Stay period for 60 days, than a border run or an Extension of Stay is needed if he wants to stay 3 months.
So he asked- "With that visa (Multiple Entry Tourist Visa) if I stay in Thailand for 3 months and fly back to the states for 1 month then decide to come back to Thailand the following month, do I have to get a brand new Multiple Entry Tourist Visa or will my METV still be valid?"
