TLDR : Answer Summary
To extend a non-O single entry visa in Thailand, you will need the following documents: a notarized income letter, TM 30, departure card, copies of your passport, a couple of passport-sized photos, and potentially a proof of income tied to your income affidavit. It is also recommended to have a completed TM 7 application form and a copy of your lease agreement (only submit if requested). Additionally, bring a copy of your Thai bankbook ID page and the latest updated page for reference.

I think those things (less the box of sweets, because the immigration officers don't want to be your friend, they want you to show up prepared) along with a filled out TM.7 application for extension should be sufficient. I would take along your lease (but don't give it to them unless you're asked) and I would take along proof that the amount you put on the income affidavit letter is backed up by something (again DON'T give it to them unless you're asked for it).
