the company registration with big and small red stamp. your contract. an employment certification. months of payslips going into your bank account. a letter from your employer saying your allowed to work from remote in particularly from thailand, arc, cover letter explaining why you want to live in thailand and stating you won't work with any while there. you need an entry exit certificate which you can at the immigration around beimen (the day before the application), you need 6+ months at a gym recognized by the ministry of sport (this is tricky) with a full traning plan and dates. Bank account with over 500nt$. I also thought the same as you and I regret I did that. Too stressfull, too picky, too many documents and extra requests, the interview was professional but really far away from being "easy or friendly". With tokyo, hong kong and kuala lumpur is probably the less recommended place to apply.

because it's a visa with 5 year validity and they know that you're probably not going to attend cooking school for years while unemployed

I did Workcation via Taipei and in-person. There were several SPers turned away when I was there for not having work info. Softpower became popular among scam agents using bogus courses etc. Taipei toughened up with requiring more evidence of financial independence during the course. Easier to apply in Vietnam, Indonesia, Laos.
