UPDATE:
With the help from my gym, my visa has been approved.
It turns out that they ask for the 5 star gym certification from every Muay Thai DTV applicant. And they are VERY picky with all other supporting documents too. I would recommend not doing it in Taipei if you can do it elsewhere.

Applying DTV through Muay in Taipei. They are asking further documents I don’t know how to provide, can anyone kindly advice thanks.
In my application I stated that I’ve retired but they are asking for proof of employment. I have submitted proof that I still have income and they’ve accepted that.
My Muay Thai gym is telling me it’s impossible to get the letter. The gym is registered with the sports authority of Thailand.
How can I get around these two? Thanks.
TLDR : Answer Summary

They highlighted that the gym must provide a 5-star certification along with other specific documents. Some commenters noted the complexities and challenges faced during the application, suggesting that fitness gyms might not always have the necessary certifications.
