I hope to apply for METV thailand visa on the 29th of July from UK. I have a flight to vietnam on the 5th with 90 day Vitnam METV already accepted.

It may come and be accepted before I leave. But if it does not. Will there be any issues. I will buy a flight from vietnam to Phuket and also an onward flight 60 days thereafter.

That's not leaving much time given their guideline is 15 working days. 4 working days is chancing it.

nope. The Thai embassy in London, in common with many Thai embassies, expects you to remain within it's jurisdiction while a visa application is processed. Leaving can jeopardise the application
