TLDR : Answer Summary
There are limitations on entries to Thailand under the visa exemption for holders of Greek passports. Typically, travelers can enter twice via land borders per calendar year with the visa exemption, while there is no limit on entries via air. However, if a traveler has spent more than 180 days in Thailand within the past year on the visa exemption, immigration officers may scrutinize their entry, as they may suspect the person is not a genuine tourist. It's advisable to have evidence such as an onward ticket or sufficient cash (equivalent to 20,000 baht) to avoid potential denial of entry.

A common process for immigration officers is to count the number of days in the past year you have been in Thailand on visa exempt. If it's more than 180 they will assume you are not a tourist and are working here illegally so will give you a hard time entering. There's nothing in Thai law about 180 days, bit they will use this as a trigger to look for ways to deny entry. One of those is asking you to show the equivalent of 20,000 baht in cash or an onward ticket. Failure to produce those might result in denial of entry. In other words, don't push it

Limit of two exempt entries via land borders per calendar year. No limit on air entries. At some point though they’ll start to question why you’re doing those back to back.
the same. As far as I’m aware no set limit. However the same applies. At some point doing back to back entries you’ll be grilled about why you’re doing so.
I've been to Thailand recently and if I'd go again to Thailand for a month in October and I'd go to Malaysia from Thailand for 15 days, then back to Thailand in November for a month. Would it be fine?
again I don’t foresee any issues. Immigration are well used to people travelling around SE Asia. It’s those that try multiple back to back entries that they’ll be questioning.

I believe if you don't maximize the days stayed here every time, didn't do extensions every time and started away at least some weeks between each time, it's not going to be an issue.
They are trying to catch people who are trying to live here constantly and potentially work illegally.
If you"re travelling Asia, then Bangkok has over the last 7 years become an a travel hub with the best prices. And instead of transiting in bkk you might as well stay some days every time. It used to be Malaysia/KL which isn't as attractive to go to our stay in.
