I have been traveling to Thailand — typically a couple trips a year =
I arrive and leave (no extensions) usually twice in a trip.
Example arrive January- stay 3 weeks+ and leave for a couple week trip somewhere else in SE Asia and then return to Thailand for another 3 weeks and the return to USA.
And then later in the year do a similar travel.

Immigration are just trying to get people who are abusing the tourist Visa with extensions and going in and out the country constantly. Not people who are here for only a few weeks
There's no legal limit written into law concerning how many times you can enter using visa exempt by air. It's going to be at the discretion of the immigration officer you are standing in front of.
It's true they've become much more strict, but it's mostly about how long you spend in Thailand, not how many times you enter. If you're only staying for a few weeks on a couple or entries, doing this twice per year shouldn't present any red flags to the immigration officer. Your behavior looks like an actual tourist, especially since you're not maximizing every entry by using 30 days and getting a 30 day extension on top.
