So do I understand it right that I need a rt pcr test before I leave cou try of origin and then those 2 more right? Does the accommodation have to be some specific type? Do they check if insurance covers you for whole period of stay?
They check everything. I've been in country for two months. Why are you trying to skip things and short end their requirements? Just follow what they want and enjoy your trip

When I went to Fiji, the requirements were similar but no one has actually ever asked me about none of those, only wanted to see an onwards ticket
No yet. I'd like to go, but I, 'm still waiting to see how is going with these new rules. I never used onward tickets, but people use to say is a good option. You can also check if your air ticket have penalty for modifying the date, some of them have free change now.
you should be prepared to be throughly checked at the thai airport upon arrival.
Regardless of what others tell you, you don’t won’t want to be the unlucky chap stuck at immigration with language and cultural differences and lacking experience dealing with thai authorities.

1. Get a visa (if required)
2. Apply for the ThailandPass. You’ll need paid accommodation, flights, transport to hotel, 2x PCR tests and insurance.
(1 and 2 can be in either order time wise).
If you’re vaccinated then your accommodation will need to be in an approved hotel for day 1 and day 5.
If you’re not vaccinated you need to stay for 10 nights in an approved hotel room.
