I applied for an elite but I will probably get rejected since I have had a 7 days overstay in jan 2021... so need plan B ๐ฅฒ

As long as you only have 1 overstay in the last 3 years it won't cause any problems. I was accepted with overstay in my passport.
so basically you're saying that you habitually ignore Thai law.

I saw school I attended before in Hua Hin offer online classes, would have to go every 3 months there but that seems fine. I liked the teacher there when I attended, is it a good idea?

Thai Immigration, Labor & Police departments are focusing on ED visas, overstayers & illegal (remote) workers.
There are still several rogue providers offering ED visas without actual attendance.
They're not focusing on remote workers. They're focusing on criminals (such as those engaged in activities like the Chinese were involved in), ED visas and overstayers.
The Thai government is serious about foreigners working illegally (ie without appropriate visa & work permit) in Thailand; whether from their hotel room, in a market, "farang" or sister-Asian.
You seem to think that the Thai authorities consider a foreigner in a coffee-shop exempt from the Thai law whereas a factory-worker in Chonburi is not. The Thai Immigration is losing money when nomads who do not have a LTR, SMART etc... Eg: yeterday 5 people were caught working on ELITE visas and taken to Lumpini Police for illegal labor. In your opinion, it seems the Thai authorities differentiate between IT criminals with a hardrive and Property owner criminals with a hard-hat.

Ed visas are now going to require actual attendance to classes. Immigration are turning up randomly at schools on days you are supposed to be studying and checking , they also ask for a progress report from the school . You also have to report and renew your visa every 3 months at immigration
yeah no problems, I am asking for one like that. I attended one in Hua Hin but covid hit and courses got a bit limited. It was good, had classes in the afternoon and good teacher.
