What are my options for renewing my visa after it expires in Thailand?

I'm Italian, since 27th of November in Thailand, I was working till the 6th of February with a non b visa, On 25th of February I did a visa run to Myanmar , On 25th my visa expires, I need to renew it

What are the options?

if you just went to the border with Myanmar as it seems, because you only have 30 days, you can visit your local Immigration office and apply for a 30 day Extension of Stay

In that case find a visa that you like to apply for and the visa that you can meet the requirements for. As there are multiple different types of visa and reasons to get a visa, it is on you to find the one that fits you.

I have no problem to fly to Vietnam, the question is, if they would let me come back...

You have a visa right now? Thailand does not have any 30 day visas. Do you currently have a visa exempt?

If you have a 30 day visa exempt, then go to your local immigration office and apply for an extension of stay based on being a tourist for 1,900 THB, this will give you an additioanl 30 days.
