Should I extend my 30-day visa on arrival in Thailand or apply for a 60-day tourist visa at the embassy?

Hi everyone, I need your advice for a visa. I am French and want to move to Thailand with a tourist visa first and then apply for a visa O non-immigrant. My question: i know when I arrived at Bangkok airport the stamp on my passport is valid for 30 days. So what is your suggestion: can i extend my stay with a stamp visa from airport immigration or it is better to request a tourist visa at Thai embassy for a visa 60 days that I will extend after in Thailand 30 days . I am currently living in Cambodia. Thank you in advance. Regards
