If it's an evisa from the UK then you should get it in 3-5 days.
oh good to hear. I booked flights today and submitted the evisa to london. Even though im irish i had no choice to send it to london as embassy in ireland has been permantently closed since covid. It does say it could take up to a month if not applying to country of residence..but i used to live in the uk and applied to that embassy before.sent my old uk address anyway.so hopefully that will do!
you really sure you want to come this year..the country may be open, but every establishment is closed.

I have heard conflicting information regarding the Visa process for an o a Visa here in United States
I have heard that it's all done online?
But when I go to the consulate website for Los Angeles it still States you need to mail in the passport?
When trying to reach them by email they just sent a generic link to their requirements which I have already read
And they do not answer the phone and they're answering machines will not take messages

the consulates have no reason to update their websites.
Go to the evisa website (same for everywhere in the world) and start filling in your information. It will tell you if you can do it online or you must do it with the embassy.
And my second dose is due on Thanksgiving November 25th
But they are closed on November 25th
And cannot receive my second dose until November 29th
Which pushes my 14-day fully vaccinations further back

From what I'm understanding I cannot apply for my Thailand pass until I have my q r code which would be only five days out from my flight no, but if I get it done at CVS November 26th the day after Thanksgiving

you don't need to be vaccinated to get your visa so start that ASAP as it's going to be the longest step. You only need your vaccination for your Thailand Pass, and you can even submit your Thailand Pass application once you've received your 2nd dose but it hasn't been 14 days yet, just make sure your flight is after the 14 days.
Also hopefully you're getting vaccinated at a place that provides you with a certificate with QR code (for example Walmart, Walgreens and CVS will all provide this once you're vaccinated and you login to their online systems)
Having a digital cert with QR code will expedite your Thailand Pass application, but CDC card is acceptable as well if it's all you have.
If you got your first dose from one of the places I listed, use the same place for your 2nd dose and see if you can register for their online system. You'll need both of your doses to be recorded in the QR code, so if you can't get that for the first dose it doesn't matter and you'll have to submit your card either way.

Give yourself at least 1 month. I had a horrible experience. So many glitches still exist due to slow adaptation of the new systems. A few days ago the thai consulate told me their visa site is down so they can't check my status.

Today is day 3 and they can't process a tourist visa because their system is down. Don't know if it is down only at the LA consulate or the entire e-visa system
yes, you can't reach out to them.. Only they can reach to you.. if they want. That is how thai consulates work in the US at the moment. Some strange folks will tell here they just spoke with a person at the consulate.. all lies. No one can reach to a live person at a US consulate on the West cost. Your only option is to email, and hope they will respond. I email twice a day these days and tomorrow I will email 3 times.

From Ireland you dont need visa for 3 weeks stay. you get visa exemption> only need thailand pass.

no not a 3 week stay. i want to travel IN 3 weeks. so hoping the process wont be too long.I want to stay 3 months so will need a tourist visa
That depends on if your country uses the new stickerless evisa or not. If you have to mail your passport in, 3 weeks could cut it close but will probably be okay.
You could also submit your Thailand Pass application now as well.
