-letter from US employer saying that I can work remotely
-most recent utility/gas bill showing my name and address in USA.
-Hotel I booked for 10 days in Hua Hin for this April.
Is this really enough? It's kind of all they asked for. I want to make sure it's okay before I pay the $400.

yes for first its enough, they might will ask you to provide pay-slips as an additional dox so wait for that and dont provide in advance otherwise they might will ask something else.....
Nearly a month. DTV process wasn't bad. But I have tried calling them and my wife is dealing with them as well for unrelated matter. They are terrible with phones and some of their rules are much more difficult than other embassies. Chicago has been the most helpful but wish Washington wasn't over florida
