If I start application in Vietnam with e-visa, can I do the follow up and send extra documents if needed from my home country? Or application gets automatically rejected? Thanks

When they ask you for your passport pages when you're back in your home country you might have a problem, then the visa might be rejected.

In your case I would not gamble just to pay less fee for the visa.
When it is rejected because you are back in your home country it is just extra money you paid.

get the application started online NOW and save it in your profile,
then the second you hit the ground in Vietnam, upload the visa/entry stamp and hotel where you're staying and then apply, pay.

I applied in the evening on 6 Nov, and was approved 12 Nov. Requested on 8th to supply additional docs. That's technically 4 working business days if you exclude the weekend.

HCMC takes 5 business days to approve providing you submit all that is required. If they ask for more documents to be submitted, the 5 days is reset when they receive them. 10 days should be enough.
