I'm applying for the DTV visa as a remote worker and will be applying for my wife and son after mine is approved.
We are Canadians and currently traveling abroad.
We have read for fast approval that staying and applying from Vietnam is a good option, however, I've also read that I need to apply from my country where my remote work employment is located (Canada).
Has anyone here applied for a visa through Vietnam with success that is not a current resident there and just staying for a month?

You can definitely apply from Vietnam. We did our Non-O retirement from Da Nang - they use Ho Chi Minh City embassy. Several friends we know have gotten the DTV from Vietnam (both HCMC and Hanoi) The standard processing time is 5 business days, but may take a bit longer if additional documentation is required. So a month in Vietnam should be plenty of time and I believe you will enjoy your time there.
Think you only need proof you are in the country you apply from. So maybe entry stamp and accomodation address? I'm sure an expert on here will give you correct info.
