TLDR : Answer Summary
A 60-day single entry Tourist Visa for Indian passport holders is not eligible for the standard 30-day tourism extension in Thailand. Indian passport holders must apply for a tourism extension, which is likely to be denied, resulting in a mandatory 7-day exit from the kingdom.

Unfortunately, Indian passport holders are not eligible for 30 days tourism extension along with Sri Lanka, Pakistan, Bangladesh, Iran, Nepal, Togo, Nigeria, and Uganda passport holders, even if they have 60 days of tourist visa entry.

All you can do is apply for a tourism extension which would be denied then get a '7 days to leave kingdom due to application denied' stamp.
