We are a family of 3 considering DTV. We have 500,000 thb in savings and 110,000 thb in monthly income for remote work. I’m expecting to be able to live off the monthly income. Is this going to be sufficient finances for DTV visas for all three? Which embassy in SEA is our best chance?

I think it depends on embassy. We are a family of 3 - the primary holder and 2 dependents. We only had to show for one and then sponsor letter and proof of income for others
That a sponsor letter is accepted for the dependants is normal, but in your case when you are with 4 persons you should have 2M on your account, so you indeed met an embassy making own rules or just making a mistake.
When you say a family of three, do you mean a legally married couple with a child? In that case you only need to show 1 x 500,000 baht usually, but some embassies make up their own rules. Applying in home country is best if possible, if not possible them Cambodia is pretty straight forward.
