I intend visiting Thailand in January using Visa Exempt 60 day entry. I then intend visiting Laos also in January, when re-entering Thailand would I still have the days left of the original entry unused?
Or would an EVisa be a better option.

Upon re-entry, you will receive a new entry stamp that allows for a fresh 60-day stay. Therefore, if you plan to visit Laos, you will not retain any days from your original entry once you leave Thailand.
If you enter Thailand on 60 days visa exemption and stay only few days and didn't make any extension then after going to Laos and reentering Thailand there will be no problem for you
