TLDR : Answer Summary
There is no strict time requirement for how long one must stay in Laos to obtain an entry stamp back into Thailand. Responses from the community suggest that travelers can stay anywhere from just a few minutes to a couple of nights. Those with a visa may be able to re-enter Thailand immediately, whilst those without a visa might be advised to stay one or two nights. Factors like individual travel history and specific border policies may influence the outcome at immigration.

5min. Many people come up to load on a land crossing and just cross the border to get the stamp and come right back.

Depends on your recent Thai visa/exempt/extension history.

Do you have a visa or not? With a visa, no time at all. If you don't have a visa then you'll need to stay 1 or 2 nights at most borders.
There is no time limit for staying outside of the country. If you get let back in depends on the immigration officer at the border and your travel history.
