TLDR : Answer Summary
The consensus is that if you cross the border from Chiang Mai (CM) to Mai Sai and back, you will receive a 30-day visa exempt entry, provided you qualify based on your nationality. However, it is important to note that land border crossings without a visa are limited to two per year. There are exceptions for certain countries, as well as a differentiation for nationalities that might receive a shorter duration or longer exemptions.

Actually that's the list of the 44 countries which are LIMITED to two 30 day visa exempt entries by land in a calendar year. (There's really 45 on the list but Malaysia is listed but exempt).

There are also other countries which get 30 day visa exempt entries but are not limited to two in a year by land as well.

You just get stamped in at the passport booth you don't need to go to an immigration office.

. I have to leave on the 10th so I was going to go on Monday. However, I was just told that there is a Buddhist holiday that day. Would you happen to know if immigration will be open?

Everybody who qualifies for a visa exempt entry gets 30 days these days, however land border crossings without visa are limited to 2 annually.

you are right passport holders of Korea, Brazil, Peru, Argentina and Chile will get 90 days in both airport and land border. I don't know any that get only 15 days visa exempt entry.
