TLDR : Answer Summary
To extend your stay in Thailand using the Mae Sai border, you'll need to exit Thailand to Myanmar, pay a fee (around $10 USD), and get stamped back into Thailand. As of December 31st, the 15-day visa-exempt stamp has been abolished, allowing travelers to receive a 30-day stamp instead. However, it's important to note that you can only receive the 30-day visa-exempt stamp through land crossings a maximum of two times in a calendar year. Ensure you have proof of onward travel and sufficient funds as these may be requested.

You show up, stamp out of thailand, pay $10USD to get into burma, stamp in, stamp out and come right back into thailand. They discontinued 15 day visa exempt stamps on Dec 31st and it's back to a 30 day stamp. Be advised you can only get a 30 day visa exempt stamp by a land crossing TWO times in a calendar year.
