Thailand imigration does not appreciate foreignors enough or they would make it much easier and cheaper for tourists that want to stay for longer terms. But if youre wealthy they will do more for your money. Im not jumping through hoops for them. Even though Ive considered going there for longer term.

Before you exit Thailand, you need to get a re-entry permit otherwise (depending on the visa you have) your visa or extension of stay expires the moment you leave. That doesn't add any additional days to your visa or permission of stay.
You can stay away as long as you like, as long you return within the validity of your visa / permission of stay.
What visa do you have? Is it single entry or multiple entry? Did you get it from a Thai embassy outside the country or from immigration inside the country? Is it a visa or an extension of a visa?
You may need to apply for a re-entry permit before you leave in order to keep your visa or extension but it's difficult to give you a full answer without knowing the details.
