How long will an application remain open if they request additional documents and we need some time to get them together? The request for additional documents doesn't state a time. Anyone have experience with an application staying open a month or two while the documents needed are in process?

I believe you are correct with the 14 days of time to reply to a request for added documents or clarification.

It's probably specific to the individual Thai Embassy or Thai Consulate that the Thai E–Visa Application was submitted to, but, each Request for Additional Documents directly from the Thai Embassy/Thai Consulate "resets" the Processing Time clock

so, for the Thai Consulate in Los Angeles, processing time is 15 business days, so, expect that after their Request for Additional Documents, the window to receive that Document Request will probably stay open for 15 business days
