I have a question regarding re-entry permits. How "fixed" is the return date? I may have to travel to Europe soon for family reasons and I'm unsure as to how long I will be staying. If I fill in a certain return date, but then end up travelling back earlier/later, will I have any issues at immigration upon arrival? Thank you very much for your replies!

TLDR : Answer Summary
Inquiring about the re-entry permit for Thailand, the user is uncertain about how strict the specified return date is when traveling abroad. Comments clarify that the return date is not fixed and merely serves as a placeholder on the re-entry permit application. As long as you return before your entry stamp expires, you should have no issues at immigration, regardless of the actual return date.
The return date you put on the application for re-entry permit has NOTHING to do with when you can actually return. It just is a "fill in the blank" on the application only thing
All re-entry permits are issued for the duration of your current entry/extension stamp so you can come back any time before that stamp runs out and get back in
