I used a

Cover letter explaining that BKK and SYD airport don’t stamp passports any more.

A bank statement with current address - she’s too young to have a card only 7

Her e ticket for her travel back to Australia in January

My Drivers licence with address

Hope that does the trick

I’m sure they will want more evidence.

I’ll offer to take her to embassy in Sydney if needed I guess.

the school maybe able to provide a letter just confirming her registered address :) have done this in the UK before - not sure if will be any different if for any reason they don’t accept your submissions already :)
